Eggnog Recipe

Ingredients

  • Six egg yolks
  • 1/4 cup sugar (50 grams)
  • 1.5 cups heavy cream (345 grams)
  • 1.5 cups whole milk (360 grams)
  • 1/2 tsp ground nutmeg
  • pinch of salt

Instructions

  • Cream egg yolks with sugar in bowl
  • In saucepan over medium heat mix heavy cream, milk, nutmeg, and salt. Stir until simmering, turn off heat.
  • Add milk mixture to egg yolk mixture, one ladle at a time, whisking continually
  • Once most milk has been added, pour back the milk and egg mixture into the saucepan
  • Stirring continually, heat up to 71c
  • Pour out mixture from saucepan into mixing bowl.
    • Filter out nutmeg with cheesecloth, if desired.
  • Pour from mixing bowl into 800 ml (quart) mason jar
  • Chill for several hours
  • Serve with dash of cinnamon
