Ingredients
- Six egg yolks
- 1/4 cup sugar (50 grams)
- 1.5 cups heavy cream (345 grams)
- 1.5 cups whole milk (360 grams)
- 1/2 tsp ground nutmeg
- pinch of salt
Instructions
- Cream egg yolks with sugar in bowl
- In saucepan over medium heat mix heavy cream, milk, nutmeg, and salt. Stir until simmering, turn off heat.
- Add milk mixture to egg yolk mixture, one ladle at a time, whisking continually
- Once most milk has been added, pour back the milk and egg mixture into the saucepan
- Stirring continually, heat up to 71c
- Pour out mixture from saucepan into mixing bowl.
- Filter out nutmeg with cheesecloth, if desired.
- Pour from mixing bowl into 800 ml (quart) mason jar
- Chill for several hours
- Serve with dash of cinnamon
