Homemade Eggnog Recipe

  • Six egg yolks
  • 1/2 tsp vanilla
  • 1/4 cup sugar (50 grams)
  • 1 cup heavy cream (230 grams)
  • 2 cups whole milk (490 grams)
  • 1/2 tsp ground nutmeg
  • pinch of salt


  • Cream egg yolks with sugar in bowl
  • In saucepan over medium heat mix heavy cream, milk, nutmeg, and salt. Stir until simmering, turn off heat.
  • Add milk mixture to egg yolk mixture, one ladle at a time, whisking continually
  • Once most milk has been added, pour back the milk and egg mixture into the saucepan
  • Stirring continually, heat up to 71c
  • Pour out mixture from saucepan into mixing bowl. Filter out nutmeg with cheesecloth, if desired.
  • Pour from mixing bowl into 800 ml (quart) mason jar
  • Add vanilla
  • Chill for several hours
  • Serve with dash of cinnamon
