Ingredients
- Six egg yolks
- 1/2 tsp vanilla
- 1/4 cup sugar (50 grams)
- 1 cup heavy cream (230 grams)
- 2 cups whole milk (490 grams)
- 1/2 tsp ground nutmeg
- pinch of salt
Instructions
- Cream egg yolks with sugar in bowl
- In saucepan over medium heat mix heavy cream, milk, nutmeg, and salt. Stir until simmering, turn off heat.
- Add milk mixture to egg yolk mixture, one ladle at a time, whisking continually
- Once most milk has been added, pour back the milk and egg mixture into the saucepan
- Stirring continually, heat up to 71c
- Pour out mixture from saucepan into mixing bowl. Filter out nutmeg with cheesecloth, if desired.
- Pour from mixing bowl into 800 ml (quart) mason jar
- Add vanilla
- Chill for several hours
- Serve with dash of cinnamon
